Once fermentation is complete the wine rests in tanks for 120 days, resulting in higher complexity due to the contact with the lees (residual yeast). A real treat for those summer days, low alcohol due to short secondary fermentation provides a lingering fruity, succulent well balance sparkling dry rosé.
